When sharpening a kitchen knife, it is important that your sharpening system / grinder has a holder that can hold long knife blades with a firm grip throughout the sharpening process. Below, Keld Lisby demonstrates three kitchen knife sharpeners, so you can choose a sharpener that suits your needs.

Remember to use the following sharpening angles:
For normal kitchen knives, sharpen at 20 degrees.
For fillet knives, sharpen at 15-17 degrees.


1. Precision Knife Sharpener from Work Sharp

2. Sharpening System from Lansky

Like the previous knife sharpener that Keld Lisby demonstrates for sharpening kitchen knives, you also do not need electricity with this sharpening system from Lansky. It is also very convenient to take this system with you on the go if you need to sharpen knives outside your home, as it is stored in a smart carrying case. With this sharpening system, you can choose different models and therefore different accompanying natural sharpening stones.

In the video below, Keld Lisby demonstrates how to sharpen kitchen knives using the Lansky Deluxe set, where he uses the black stone for damaged edges. This stone corresponds to grit 70. In addition, there is a red stone for maintaining the edge after using the black stone. The green sharpening stone, grit 280, can be used at the beginning of your sharpening process if you do not have a damaged edge but simply want to make your kitchen knives sharper. With the blue natural stone, grit 600, you make the edge even sharper after sharpening with the green stone. The yellow ceramic stone makes your kitchen knife razor sharp.

Remember to apply a drop of oil to the Lansky stones before sharpening.

3. MK2 Electric Knife Sharpener from WorkSharp

The Mk2 knife sharpener from Worksharp uses abrasive belts, which come in three different grits. You should start with the grit 80 if your knives have nicks in the edge.
